Weight: 162
Well after not working out for a few weeks and eating whatever I want in moderation, I gained 2 pounds back. I know that doesn't seem like much but I can tell a difference in my clothes. So I started my workout regiment again this morning and it felt good!!! I decided that until I can see the doctor about my blood sugar issues, I will hold off on the big-time diets since I was having a lot of blood sugar episodes while doing the low-calorie diet. I am sticking to my insulin-resistance diet and I am hoping that when I go see the endocrinologist, she will do a consult for me to see another nutrionist. Until then, I will watch what I eat and keep it as healthy as possible. I have made alot of changes in the household as to the amount of healthy food we are eating and so far so good. It is just a matter of adjusting our taste-buds. But we are definitely eating better, which is a good thing!!
As far as the family is concerned, things are ok. The kids and I have been sick but we are slowly on the mend. Jordan is still not feeling well and I am she gets better soon. We are very excited because we are having special guests this weekend. Anna and Grace are coming to visit. I have missed them so much and can't wait to see them. I am already trying to plan my trip up there to visit them. I am praying that Matt gets orders somewhere close and not in Washington.
Well I better run....I have a million things to do before friday!!!

Tasty Tuesday: Fiesta Chicken Bake
As most of you know, I am a Tastefully Simple consultant and love the products. I have almost every standard product in my cupboards and have to replenish them often with the exception of one...the Fiesta Party Dip Mix. I just haven't been able to use it since it is rather spicy and I just can't eat too much spice. But I found a great recipe which uses it and my family loved!! I am going to post the original recipe and then tell you how I revamped it a little.
Instead of using 2 tablespoons, I used only 1 1/2 and it still had a significant amount of heat so you could get away with 1 tablespoon. If you don't have any on hand, you could always use taco seasoning but I would use probably 3-4 tablespoons to get the good flavoring. I also unsed Nacho Cheese Doritios instead of the Blue Aztec chips because I can't eat seasame seeds well. It was so yummy and a huge hit in my household which consists of the most picky eaters going!!

2 Tbsp. Fiesta Party Dip Mix™
10.75 oz. can cream of mushroom soup
2 cups shredded Cheddar cheese, divided
6 boneless, skinless chicken breasts
2 cups crushed Blue Aztec Chips
Directions
Combine Fiesta Party Dip Mix™, soup and 1 cup cheese; stir to blend.
Place chicken in a greased baking pan; top with Fiesta Party Dip mixture.
Bake chicken, uncovered, at 375° for 35-40 minutes.
Sprinkle crushed chips and remaining cheese over chicken; bake additional 5 minutes.
Makes 6 servings.

Make-Over Monday: Eating Better
So it is Make-Over Monday!!!! But I didn't exercise or weigh-in today. I am still feeling under the weather and trying to catch up from being gone on emergency leave. I decided I am officially going to start back on my routine on Wednesday...I know random day but it fits the best!! Plus it gives me one more day to feel 100%!! So Wednesday I will update. I know I gained weight while we were gone since it was so hectic and we ate on the fly most of the time. I am so tired of fast food and junk, it is time to make a huge change in our household.
I was watching "The Doctors" the other day and they were talking about processed foods and how America is so accustom to eating processed foods. What surprised me is the fact that 95% of the food carried in the grocery store is considered processed, even frozen vegatables and milk. So instead of cutting out processed foods, I am going to concern myself with being smarter about what is listed in the ingredients and what is better for my family. I am going to avoid things like "enriched flour", "partially hydrogenated" and "high fructose corn syrup" and the like. I am going to try to look for things that are as close to natural as possible. But the key is to not try to do it all at once, I need to retrain our taste-buds. I am the worst one in the family since I have a wicked day sweet tooth. The hardest part for me is going to be with Jordan who loves fruit but we have to limit it because it causes her to have awful diaper rashes. But I am hoping in the long run, this works for my family and we get to a better eating lifestyle.

Revamping my blog
I am so behind on my blog and I need to catch everyone up but I decided I am going to revamp it a little bit. This way I can make sure I am writing most of the week!! I am stealing this from my dear friend Ally and I am going to make the majority of my blog themed through out the week.
Mondays will be Makeover Mondays, all about my journey of trying to lose weight and revamp my life.
Tuesdays will be Tasty Tuesdays, it will feature a favorite recipe of mine every week and how my pick-eaters reacted to the recipe!!
